Ingredients

  • 1 kilogram boneless lamb shoulder
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 4 cloves fresh garlic, minced
  • 1 teaspoon dried rosemary
  • 1 tablespoon dijon mustard
  • 2 tablespoons lemon juice
  • 2 tablespoons flat-leaf parsley, chopped
  • 1 tablespoon mint leaves, chopped

Directions

Step 1

Preheat the oven to 190°C (375°F).

Step 2

Rub the lamb shoulder with 1 tablespoon of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, minced garlic, dried rosemary, and dijon mustard. Ensure the lamb is evenly coated on all sides.

Step 3

Place the lamb on a roasting pan and roast in the oven for 90 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare. Adjust cooking time to your preferred doneness.

Once cooked, remove the lamb from the oven and allow it to cool at room temperature for 30 minutes.

Step 5

Wrap the cooled lamb tightly in plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Step 6

Before serving, slice the chilled lamb thinly against the grain and arrange on a serving platter.

Step 7

In a small bowl, whisk together the remaining olive oil, lemon juice, parsley, mint, and the remaining salt and pepper to create a dressing.

Step 8

Drizzle the dressing over the sliced lamb or serve it on the side as a dip.

Step 9

Enjoy your 'Cold Shoulder' with a side of crusty bread or a fresh green salad.
