Ingredients

  • 1 cup Green or brown lentils
  • 3 cups Water
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 0.25 cup Fresh parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Crumbled feta cheese (optional)

Directions

Step 1

Rinse the lentils thoroughly under cold water.

Step 2

In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce the heat to low and simmer for 20–25 minutes, or until the lentils are tender but not mushy. Drain and allow them to cool completely.
