Ingredients

  • 500 grams fresh green beans
  • 100 grams Gruyere cheese
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 garlic clove, grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Fill a large pot with water and bring it to a boil. Prepare a large bowl of ice water and set it aside.

Step 2

Trim the ends of the green beans. Once the water is boiling, add the green beans and cook for 3-4 minutes, or until they are tender but still crisp and vibrant green.

Step 3

Immediately transfer the cooked green beans to the bowl of ice water to stop them from cooking further. Let them cool completely, then drain and pat dry with a clean kitchen towel.

Step 4

Grate the Gruyere cheese using a coarse grater and set it aside.

Step 5

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, grated garlic, salt, and black pepper until emulsified.

Step 6

In a large mixing bowl, combine the cooled green beans, grated Gruyere cheese, and chopped parsley. Drizzle the dressing over the green beans and toss gently to coat.

Step 7

Transfer the salad to a serving platter or bowl. Serve immediately, or refrigerate for up to 2 hours before serving for a chilled option.
