  • 2 lbs Small red potatoes
  • 6 slices Thick-cut bacon
  • 1 Yellow onion

  • 2 tbsp Fresh parsley

Directions

Step 1

Rinse the red potatoes thoroughly and place them in a large pot. Cover the potatoes with water, add a pinch of salt, and bring to a boil over high heat.

Reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are fork-tender. Drain the potatoes and let them cool slightly.
