Ingredients

  • 1 cup Sticky rice
  • 0.5 cup Coconut milk
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • 1 piece Kiwi
  • 1 piece Mango
  • 4 pieces Strawberries
  • 3 tablespoons Honey
  • 1 tablespoon Lime juice
  • 3 pieces Mint leaves (optional)

Directions

Step 1

Rinse the sticky rice thoroughly until the water runs clear. Cook the rice according to package instructions.

Step 2

In a small saucepan, heat the coconut milk, sugar, and vanilla extract over low heat until the sugar dissolves completely. Do not boil.

Step 3

Once the rice is cooked, mix it with the sweetened coconut milk. Stir well until the rice absorbs the coconut milk. Let it cool to room temperature.

Step 4

While the rice is cooling, prepare the fruit: peel and slice the kiwi and mango into thin strips, and cut the strawberries into halves or quarters, depending on their size.

Step 5

Line a bamboo sushi mat or a sheet of plastic wrap with parchment paper. Spread a layer of the cooled sticky rice evenly across the surface, about 1/2 inch thick.

Step 6

Place the sliced fruits in a line along one edge of the rice. Use the mat or parchment paper to gently roll the rice and fruit into a sushi roll shape. Apply light pressure to ensure it holds its shape. Repeat with remaining rice and fruit.

Step 7

Using a sharp knife, slice the rolls into bite-sized pieces, wiping the knife with a damp cloth between cuts to prevent sticking.

Step 8

To make the honey-style dipping sauce, mix the honey and lime juice in a small bowl. Stir until smooth. Garnish with finely chopped mint leaves, if desired.

Step 9

Serve the fruit sushi on a platter with the honey-style dipping sauce on the side. Enjoy this creative and healthy treat!
