Ingredients

  • 6 large carrots
  • 1 green bell pepper
  • 1 medium onion
  • 1 can (10.5 oz) tomato soup
  • 0.5 cup white vinegar
  • 0.5 cup granulated sugar
  • 0.25 cup vegetable oil
  • 1 teaspoon prepared mustard
  • 1 teaspoon celery seed
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel and slice the carrots into thin, round slices (approximately 1/4-inch thick).

Step 2

Bring a pot of salted water to a boil. Add the sliced carrots and cook for 5-7 minutes until they are just tender but not mushy. Drain and set aside to cool.

Step 3

Slice the green bell pepper into thin strips. Peel and slice the onion into thin rings.

Step 4

In a medium saucepan, combine the tomato soup, white vinegar, sugar, vegetable oil, mustard, celery seed, salt, and black pepper. Stir well and bring the mixture to a gentle boil over medium heat. Reduce heat and simmer for 2-3 minutes.

Step 5

In a large bowl or container with a lid, layer the cooked carrots, sliced onions, and green peppers.

Step 6

Pour the warm marinade over the vegetable layers, ensuring that all the vegetables are coated. Gently toss if needed.

Step 7

Cover the bowl or container and refrigerate for at least 6 hours or overnight to allow the flavors to meld.

Step 8

Before serving, give the mixture a gentle toss. Serve chilled as a side dish or appetizer.
