Ingredients

  • 2 pounds Raw shrimp (large, deveined, shell-on)
  • 24 ounces Beer (light or lager)
  • 8 cups Water
  • 1 whole Lemon (sliced)
  • 4 cloves Garlic (smashed)
  • 2 leaves Bay leaves
  • 2 tablespoons Old Bay seasoning
  • 4 cups Ice cubes
  • 1 teaspoon Salt (optional)

Directions

Step 1

In a large pot, combine beer, water, sliced lemon, smashed garlic, bay leaves, Old Bay seasoning, and salt (if using). Bring the mixture to a boil over medium-high heat.

Step 2

Once the liquid is boiling, add the shrimp to the pot. Stir gently to ensure the shrimp are fully submerged.

Step 3

Cook the shrimp for 2-3 minutes or until they turn pink and opaque. Be careful not to overcook.

Step 4

Using a slotted spoon, immediately transfer the shrimp to a large bowl filled with ice cubes to stop the cooking process.

Step 5

Let the shrimp chill in the ice bath for 5-10 minutes, until completely cold.

Step 6

Drain the shrimp and peel them, leaving the tail intact if desired for presentation.

Step 7

Serve the cold beer shrimp on a platter with lemon wedges and your favorite dipping sauces, such as cocktail sauce or garlic aioli.
