Ingredients

  • 3 tablespoons unsalted butter
  • 6 slices bacon, diced
  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 3 medium russet potatoes, peeled and diced
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • 4 cups kale, stems removed and chopped
  • 3 stalks scallions, thinly sliced (green parts only)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

Step 2

Add the unsalted butter to the pot with the bacon fat. Once melted, add the finely chopped onion and sauté until soft and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the diced potatoes to the pot and pour in the chicken or vegetable stock. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 5

Using a potato masher or an immersion blender, lightly mash some of the potatoes in the pot to create a creamy texture while keeping some chunks intact.

Step 6

Stir in the heavy cream and chopped kale. Simmer uncovered for an additional 5 minutes, or until the kale is tender.

Step 7

Season the chowder with salt and black pepper. Adjust seasoning to taste.

Step 8

Ladle the chowder into bowls and top with the crispy bacon, sliced scallions, and a sprinkle of fresh parsley, if desired.

Step 9

Serve hot and enjoy your comforting Colcannon Chowder!
