  • 2 cups cola (not diet soda)
  • 2 cups low-sodium chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 3 medium carrots (peeled and sliced into rounds)
  • 3 medium potatoes (peeled and cut into chunks)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

Heat the oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Season the pork chunks with salt and pepper and sear them in batches until browned on all sides. Transfer the browned pork to a plate and set aside.

Reduce the heat to medium and add the diced onion to the pot. Cook for 3-4 minutes, stirring occasionally, until softened.
