  • 1 cup cola
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 whole bay leaf
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 tablespoons, chopped (optional for garnish) fresh cilantro

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrot, and celery to the pot. Cook for 5-7 minutes, stirring often, until the vegetables are softened.
