Ingredients

  • 24 cookies Chocolate sandwich cookies
  • 6 tablespoons Unsalted butter, melted
  • 1 quart Coffee ice cream
  • 1 cup Heavy cream
  • 3 tablespoons Brown sugar, packed
  • 1 teaspoon Vanilla extract
  • 1 cup Toffee bits
  • 2 tablespoons Chocolate shavings (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Place the chocolate sandwich cookies in a food processor and pulse until finely ground.

Step 3

Transfer the cookie crumbs to a mixing bowl and stir in the melted butter until fully combined.

Step 4

Press the crumb mixture evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Use the bottom of a glass to pack it tightly.

Bake the crust in the preheated oven for 8–10 minutes. Remove from the oven and let it cool completely.

While the crust cools, take the coffee ice cream out of the freezer to soften slightly, about 10 minutes.
