Preheat your oven to 350°F (175°C).
Place the chocolate sandwich cookies in a food processor and pulse until finely ground.

Press the crumb mixture evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Use the bottom of a glass to pack it tightly.

While the crust cools, take the coffee ice cream out of the freezer to soften slightly, about 10 minutes.
Once the crust is cool, spread the softened coffee ice cream evenly into the crust. Smooth the top with a spatula.
