Ingredients

  • 0.5 cup Unsalted butter (room temperature)
  • 0.75 cup Dark brown sugar (packed)
  • 0.25 cup Granulated sugar
  • 2 pieces Large eggs
  • 0.5 cup Whole milk
  • 1 teaspoon Vanilla extract
  • 0.5 cup Pecans (chopped, for praline topping)
  • 3 tablespoons Brown sugar (for praline topping)
  • 2 tablespoons Unsalted butter (melted, for praline topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners or lightly grease the pan.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a small bowl, dissolve the instant coffee granules in the boiling water. Allow it to cool slightly.

Using a hand mixer or stand mixer, cream the room-temperature butter, dark brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
