Ingredients

  • 2 teaspoons Instant coffee powder (or espresso powder)
  • 2 tablespoons Hot water
  • 3 large Egg yolks
  • 5 tablespoons Granulated sugar
  • 1.25 cups Heavy cream
  • 1 teaspoon Vanilla extract
  • 1.5 teaspoons Gelatin powder (unflavored)
  • 2 tablespoons Cold water
  • 2 tablespoons Chocolate shavings (optional, for garnish)

Directions

Step 1

In a small bowl, dissolve the instant coffee powder in the hot water. Set aside to cool slightly.

Step 2

In a heatproof bowl, whisk together the egg yolks and 4 tablespoons of the granulated sugar until light and creamy.

Step 3

Place the bowl over a pot of simmering water (double boiler method) and whisk constantly until the mixture thickens slightly and reaches about 160°F (70°C). This will ensure the yolks are pasteurized. Remove from heat.

Step 4

Stir the dissolved coffee mixture and vanilla extract into the egg yolk mixture. Allow it to cool to room temperature.

Step 5

In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom.

Step 6

Warm the bloomed gelatin in the microwave for about 10 seconds or until fully dissolved and liquid. Stir into the coffee-egg yolk mixture.

Step 7

In a separate bowl, whip the heavy cream and the remaining 1 tablespoon granulated sugar to soft peaks. Gently fold one-third of the whipped cream into the coffee mixture to lighten it.

Step 8

Fold the remaining whipped cream into the mixture in two additions until fully combined. Be gentle to retain the airiness.

Step 9

Divide the mousse equally into serving glasses or bowls. Smooth the tops and refrigerate for at least 2 hours to set.

Step 10

Before serving, garnish with chocolate shavings, if desired. Serve chilled.
