Ingredients

  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 115 grams Unsalted butter
  • 100 grams Brown sugar
  • 80 ml Maple syrup
  • 120 ml Strong brewed coffee
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 100 grams Walnuts, chopped
  • 50 ml Milk

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a 12-cup muffin tin with paper liners.

Step 2

In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.

Step 3

In a separate large bowl, melt the unsalted butter and let it cool slightly.

Step 4

Add the brown sugar and maple syrup to the melted butter and whisk until smooth.

Step 5

Stir in the brewed coffee, vanilla extract, and eggs, one at a time, whisking well after each addition.

Step 6

Slowly mix in the dry ingredients, alternating with the milk, beginning and ending with the dry ingredients. Do not overmix; the batter should be lumpy.

Step 7

Fold the chopped walnuts into the batter gently.

Step 8

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 9

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Remove the muffins from the oven and let them cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature, with a cup of freshly brewed coffee or tea.
