  • 20 pieces Chocolate sandwich cookies
  • 4 tablespoons Unsalted butter, melted
  • 1.5 quarts Coffee ice cream, softened
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Chocolate shavings (optional, for garnish)

Directions

Step 1

Place 20 chocolate sandwich cookies in a food processor and pulse until they form fine crumbs.

Step 2

In a medium bowl, combine the cookie crumbs with 4 tablespoons of melted unsalted butter. Stir until the mixture resembles wet sand.

Step 3

Press the crumb mixture evenly into the bottom and up the sides of a 9-inch pie dish to form the crust. Place the crust in the freezer for at least 15 minutes to set.
