Ingredients

  • 2 cups Whole milk
  • 0.5 cups Heavy cream
  • 2 tablespoons Instant coffee granules
  • 0.5 cups Granulated sugar
  • 3 tablespoons Cornstarch
  • 1 tablespoon Unsweetened cocoa powder
  • 0.25 teaspoons Salt
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0 (optional, for garnish) Whipped cream
  • 0 (optional, for garnish) Chocolate shavings

Directions

Step 1

In a medium saucepan, whisk together the sugar, cornstarch, cocoa powder, and salt until well combined.

Step 2

In a separate bowl, mix the whole milk and heavy cream. Gradually add this mixture to the saucepan, whisking constantly to prevent lumps.

Step 3

Place the saucepan over medium heat and cook the mixture, stirring constantly, for about 5 minutes or until it begins to thicken slightly.

Step 4

In a small bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the hot milk mixture into the yolks, whisking constantly to temper the eggs.

Step 5

Pour the tempered egg mixture back into the saucepan and continue to cook for another 2–3 minutes, whisking constantly, until the pudding thickens to a custard-like consistency.

Step 6

Remove the saucepan from heat and stir in the instant coffee granules and vanilla extract until fully dissolved and incorporated.

Step 7

Pour the pudding into individual serving dishes and cover each with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming.

Step 8

Let the pudding cool at room temperature for 10–15 minutes, then transfer to the refrigerator to chill for at least 2 hours.

Step 9

Before serving, top the pudding with whipped cream and chocolate shavings if desired.
