Ingredients

  • 8 lbs fully cooked bone-in ham
  • 1 cup strong brewed coffee
  • 1 cup brown sugar
  • 0.25 cup honey
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 0.5 tsp ground cloves
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Place the ham in a large roasting pan, fat-side up. Score the surface of the ham in a crisscross pattern with shallow cuts about 1/2 inch deep.

Step 3

In a medium saucepan, combine the brewed coffee, brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and black pepper. Heat over medium heat, stirring frequently, until the mixture is smooth and slightly thickened, about 5 minutes.

Step 4

Brush about 1/3 of the coffee glaze all over the ham, ensuring it gets into the scored cuts. Cover the ham loosely with aluminum foil to prevent over-browning.

Step 5

Bake the ham in the preheated oven for 1 hour.

Step 6

After 1 hour, remove the foil and brush another 1/3 of the glaze over the ham. Continue baking, uncovered, for another 30 minutes.

Step 7

For the final 30 minutes of cooking, brush the remaining glaze over the ham every 10 minutes to build up a rich, sticky coating.

Step 8

Once the ham has reached an internal temperature of 140°F (60°C), remove it from the oven and let it rest for 15 minutes before slicing.
