Ingredients

  • 250 g All-purpose flour
  • 150 g Unsalted butter
  • 150 g Brown sugar
  • 3 large Eggs
  • 120 ml Strong brewed coffee
  • 300 g Mixed dried fruits (raisins, currants, chopped dried apricots)
  • 100 g Chopped nuts (walnuts, almonds, or pecans)
  • 1.5 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.5 tsp Salt
  • 1 tsp Vanilla extract
  • 30 ml Coffee liqueur (optional)

Directions

Step 1

Preheat your oven to 160°C (320°F) and line a 20cm (8-inch) round cake tin with parchment paper.

Step 2

In a large mixing bowl, beat the unsalted butter and brown sugar together until light and fluffy.

Step 3

Add the eggs, one at a time, beating well after each addition.

Step 4

Stir in the brewed coffee, vanilla extract, and coffee liqueur (if using). Mix until well combined.

In another bowl, sift together the all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg.
