Ingredients

  • 200 grams Unsalted butter
  • 150 grams Granulated sugar
  • 50 grams Light brown sugar
  • 1 large Egg
  • 2 teaspoons Vanilla extract
  • 360 grams All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 20 grams Cocoa powder (unsweetened)
  • 50 grams Mini chocolate chips
  • 100 grams Milk chocolate (for melting)
  • 50 grams White chocolate (for melting)
  • 30 grams Mini marshmallows

Directions

Step 1

Preheat the oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and light brown sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract, and beat until fully incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and cocoa powder.

Step 5

Gradually add the dry ingredients to the butter mixture, mixing until just combined. Do not overmix.

Step 6

Fold in the mini chocolate chips gently to evenly distribute them.

Step 7

Divide the dough into 24 equal pieces (approximately 2 tablespoons each) and roll each piece into a ball.

Step 8

Flatten each ball slightly and shape it into a small coffee cup by pinching the sides upward. Use your thumb to create a small depression in the center that will act as the 'cup'.

Step 9

Place shaped dough onto the prepared baking sheet, leaving some space between each piece to allow for spreading.

Step 10

Bake the cookies in the preheated oven for 10-12 minutes or until edges are set but the centers are still soft.

Step 11

Remove from the oven and immediately reshape the 'cups' if needed using the back of a spoon. Allow cookies to cool completely on the baking sheet.

Step 12

Melt the milk chocolate and white chocolate separately in microwave-safe bowls, stirring every 15-20 seconds until smooth.

Step 13

Dip the top rim of each cookie cup into the melted milk chocolate to resemble a filled coffee cup. Use melted white chocolate to drizzle or create 'foam art' designs.

Step 14

Attach a mini marshmallow to the side of each cookie using a small amount of melted milk chocolate to create a 'coffee cup handle'. Let the chocolate set completely before serving.

Step 15

Serve your Coffee Cup Cookies as a fun dessert or snack, and enjoy them with a cup of real coffee!
