Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup brown sugar, packed
  • 1.5 teaspoons ground cinnamon
  • 0.5 cup unsalted butter, melted
  • 1.5 cups all-purpose flour (for crumb topping)
  • 2 tablespoons powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

Step 2

In a medium bowl, sift together 2.5 cups of flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large bowl, cream together 1 cup of granulated sugar and 0.5 cup of softened butter using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.

Step 5

Reduce the mixer speed to low and alternately add the dry ingredients and the sour cream to the wet mixture, starting and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 6

Pour the batter into the prepared pan and spread it out evenly with a spatula.

Step 7

In a separate bowl, combine 1 cup of brown sugar, 1.5 teaspoons of ground cinnamon, 0.5 cup of melted butter, and 1.5 cups of flour to create the crumb topping. Use a fork to mix until large crumbs form.

Step 8

Evenly sprinkle the crumb topping over the cake batter in the pan.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Let the cake cool completely in the pan on a wire rack. Once cooled, dust the top with powdered sugar if desired.

Step 11

Slice and serve with coffee or tea. Enjoy!
