Ingredients

  • 1.5 cups all-purpose flour
  • 2 tablespoons instant coffee granules
  • 1 teaspoon baking powder
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 0.75 cups granulated sugar
  • 0.25 cups brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cups mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the flour, instant coffee granules, baking powder, and salt. Set aside.

Step 3

In a large bowl, using a hand or stand mixer, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).

Add the egg and vanilla extract to the butter mixture, and mix until fully incorporated.

Gradually add the dry ingredients to the wet ingredients, mixing at low speed until just combined. Be careful not to overmix.
