Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup (packed) Brown sugar
  • 0.5 cup Unsalted butter
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 0.75 cup Milk
  • 1.5 cups Fresh blueberries
  • 0.5 cup Powdered sugar

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking pan or line it with parchment paper.

Step 2

In a medium bowl, combine 2 cups of all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined—do not overmix.

Step 6

In a small bowl, toss the blueberries with the remaining 0.5 cup of flour to coat. Gently fold the blueberries into the batter.

Step 7

Pour the batter into the prepared baking pan, spreading it evenly.

Step 8

In a separate small bowl, prepare the streusel topping by mixing together the brown sugar, cinnamon, and remaining 0.5 cup of flour. Cut in the remaining butter using a fork or pastry cutter until the mixture resembles coarse crumbs.

Step 9

Sprinkle the streusel topping evenly over the batter in the pan.

Step 10

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 11

Allow the coffee cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 12

Dust with powdered sugar before serving, if desired. Enjoy!
