Ingredients

  • 2 cups All-purpose flour

  • 0.75 cups Brewed coffee, cooled
  • 0.5 cups Unsalted butter, melted and cooled
  • 1 teaspoons Vanilla extract
  • 2 Eggs
  • 0.25 cups Milk
  • 1 teaspoons Instant coffee granules (optional, for stronger flavor)
  • 0.5 cups Optional: Chocolate chips or chopped nuts

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Set this dry mixture aside.

Step 3

In a medium mixing bowl, combine the cooled brewed coffee, melted butter, vanilla extract, eggs, and milk. If using instant coffee granules for a stronger coffee flavor, dissolve them in the liquid mixture as well.

Create a well in the center of the dry ingredients and pour the wet ingredients into the well. Gently fold the mixture together using a spatula or wooden spoon until just combined. Do not overmix; the batter should be slightly lumpy.
