Ingredients

  • 480 ml Heavy cream
  • 120 ml Strong brewed coffee
  • 6 large Egg yolks
  • 100 g Granulated sugar
  • 1 tsp Vanilla extract
  • 2 tbsp Brandy
  • 1 pinch Salt
  • 6 tsp Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 160°C (320°F).

Step 2

In a medium saucepan, combine the heavy cream and strong brewed coffee. Heat over medium heat, stirring occasionally, until the mixture is just about to simmer. Remove from heat.

Step 3

In a mixing bowl, whisk together the egg yolks, granulated sugar, vanilla extract, brandy, and a pinch of salt until smooth and slightly pale.

Step 4

Slowly add the warm cream and coffee mixture to the egg yolk mixture, whisking constantly to avoid curdling.

Step 5

Strain the custard mixture through a fine-mesh sieve into a clean bowl to remove any lumps or clumps.

Divide the mixture evenly among six small ramekins, filling each about three-quarters full.

Step 7

Place the ramekins in a deep baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins to create a water bath.

Carefully transfer the baking dish to the preheated oven and bake for 40-45 minutes, or until the custards are set but still slightly jiggly in the center.

Remove the ramekins from the water bath and let them cool at room temperature for about 30 minutes. Then, cover and refrigerate for at least 2 hours or overnight.

When ready to serve, sprinkle 1 teaspoon of sugar evenly over the top of each custard. Use a kitchen torch to caramelize the sugar until golden brown and crisp.
