Ingredients

  • 200 grams Dark chocolate (70% cocoa or higher)
  • 100 milliliters Heavy cream
  • 2 teaspoons Instant coffee granules
  • 25 grams Unsalted butter
  • 300 grams Dark chocolate (for coating)
  • 2 tablespoons Cocoa powder (for dusting)

Directions

Step 1

Chop 200 grams of dark chocolate into small, even pieces and place them in a heatproof bowl.

Step 2

In a small saucepan, heat the heavy cream over medium heat until it starts to steam but does not boil. Remove from heat and stir in the instant coffee granules until dissolved.

Step 3

Pour the hot cream mixture over the chopped dark chocolate. Let it sit for 2 minutes to allow the chocolate to melt, then stir gently with a spatula until the mixture becomes smooth and glossy.

Step 4

Add the unsalted butter to the mixture and stir until it is fully incorporated. This will give the bonbons a silky texture.

Step 5

Cover the bowl with plastic wrap and refrigerate the mixture for 2 to 3 hours, or until it firms up enough to be scooped and shaped.

Step 6

Using a teaspoon or a small cookie scoop, portion out the chilled chocolate mixture and roll it into small, bite-sized balls with your hands. Place the balls onto a parchment-lined tray and refrigerate for 30 minutes to firm up again.

Step 7

Melt the 300 grams of dark chocolate for coating in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in 30-second bursts, stirring between each interval until smooth.

Step 8

Using a fork or dipping tool, dip each chilled chocolate ball into the melted dark chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off before placing the coated bonbon back onto the parchment-lined tray.

Step 9

Optional: Lightly dust the bonbons with cocoa powder while the coating is still wet for an elegant finish.

Step 10

Let the coated bonbons set at room temperature or place them in the refrigerator for 20 minutes until the chocolate hardens.

Step 11

Enjoy your Coffee Bonbons as a delightful treat or store them in an airtight container in the refrigerator for up to 1 week.
