Ingredients

  • 250 grams All-purpose flour
  • 150 grams Unsalted butter (cold, cubed)
  • 100 grams Granulated sugar
  • 2 teaspoons Instant coffee powder
  • 1 tablespoon Hot water
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

Dissolve the instant coffee powder in the hot water and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and a pinch of salt.

Step 4

Add the cold cubed butter to the bowl, and use your fingertips to rub the butter into the flour mixture until it resembles coarse breadcrumbs.

Step 5

Pour in the dissolved coffee mixture and add the vanilla extract. Mix the dough gently until it just comes together.

Step 6

Transfer the dough onto a lightly floured surface and knead briefly until smooth. Be careful not to overwork the dough.

Step 7

Roll the dough out to about 1/4-inch thickness. Use a cookie cutter of your choice to cut out biscuit shapes, and place them on the prepared baking sheet.

Step 8

Gather any leftover dough, re-roll, and cut out more biscuits until all the dough is used.

Step 9

Bake in the preheated oven for about 10-12 minutes, or until the edges of the biscuits are lightly golden.

Step 10

Remove from the oven and let the biscuits cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve and enjoy with your favorite cup of coffee or tea.
