  • 2 cups All-purpose flour
  • 0.25 cup Granulated sugar
  • 1 tablespoon Baking powder

  • 1 teaspoon Instant coffee granules
  • 0.5 cup Cold unsalted butter
  • 1 large Ripe banana
  • 0.5 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 0.5 cup Powdered sugar
  • 1 tablespoon Strong brewed coffee

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and instant coffee granules.

Step 3

Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Mash the ripe banana in a small bowl until smooth. Add the heavy cream, vanilla extract, and egg, and whisk until well combined.
