Ingredients

  • 480 ml Brewed coffee
  • 50 g Granulated sugar
  • 3 packets Unflavored gelatin
  • 180 ml Baileys Irish Cream
  • 120 ml Hot water

Directions

Step 1

In a medium saucepan, combine 360ml of brewed coffee and granulated sugar. Stir over medium heat until the sugar is fully dissolved. Remove from heat.

Step 2

In a small bowl, add 2 packets of unflavored gelatin to 120ml of hot water. Stir until completely dissolved.

Step 3

Pour the dissolved gelatin mixture into the coffee and sugar mixture. Stir well to combine.

Step 4

Pour the coffee mixture into a square or rectangular dish (preferably a glass baking dish) to create a shallow layer, about 1 inch thick. Set aside to cool to room temperature before refrigerating.

Step 5

Refrigerate the coffee layer for at least 2 hours or until fully set.

Step 6

In a separate saucepan, gently heat the remaining 120ml of brewed coffee (do not boil). Sprinkle the remaining 1 packet of unflavored gelatin over the warm coffee and stir until dissolved.

Step 7

Remove from heat, then mix in the Baileys Irish Cream. Stir until smooth and well combined.

Step 8

Allow the Baileys mixture to cool to room temperature, then carefully pour it over the set coffee layer in the dish. Refrigerate for another 2 hours or until both layers are firmly set.

Step 9

Once fully set, gently run a knife around the edges of the dish to loosen the layers. Cut the jello into small cubes using a sharp knife.

Step 10

Serve chilled as a fun, bite-sized dessert. Store leftovers in an airtight container in the refrigerator for up to 3 days.
