  • 500 ml Brewed coffee
  • 50 g Granulated sugar
  • 10 g Gelatin powder
  • 50 ml Water (for gelatin bloom)
  • 200 g Sweetened azuki bean paste (anko)
  • 100 ml Whipped cream (optional, for topping)

Directions

Step 1

Begin by blooming the gelatin: In a small bowl, sprinkle the gelatin powder evenly over 50 ml of cold water. Let it sit for about 5 minutes to fully hydrate.

Step 2

In a medium saucepan, combine the brewed coffee and granulated sugar. Place over medium heat and stir until the sugar is fully dissolved. Do not let it boil.

Step 3

Remove the saucepan from heat and immediately stir in the bloomed gelatin until completely dissolved. Stir thoroughly to ensure there are no clumps of gelatin.

Step 4

Allow the coffee-gelatin mixture to cool slightly, then pour it evenly into four serving glasses or molds, filling them about three-quarters full. Leave some space for the azuki bean layer.

Refrigerate the glasses for at least 2 hours or until the coffee gelatin is fully set.

Once the gelatin is set, take the sweetened azuki bean paste and divide it equally among the four glasses. Spread it gently over the top of the gelatin layer, creating an even layer of azuki paste.
