Ingredients

  • 1 tablespoon Instant coffee granules
  • 2 tablespoons Hot water
  • 4 tablespoons Granulated sugar
  • 1.5 cups Heavy cream
  • 2 large Egg whites
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 ounce Dark chocolate (optional, for garnish)

Directions

Step 1

In a small bowl, dissolve the instant coffee granules in 2 tablespoons of hot water. Set aside to cool slightly.

Step 2

In a medium mixing bowl, whip the heavy cream with 2 tablespoons of granulated sugar using an electric mixer until soft peaks form. Transfer the whipped cream to the refrigerator to keep chilled.

Step 3

In a clean mixing bowl, beat the egg whites with the remaining 2 tablespoons of granulated sugar until stiff peaks form. Ensure the bowl and beaters are completely clean and dry for best results.

Step 4

Gently fold the dissolved coffee mixture into the whipped cream, using a spatula to maintain the light texture.

Step 5

Next, gently fold the beaten egg whites into the coffee-cream mixture in batches. Be careful not to deflate the mixture as you fold.

Step 6

Add the vanilla extract and sift in the powdered sugar, folding gently until fully incorporated and smooth.

Step 7

Divide the mousse evenly among 4 serving glasses or ramekins, smoothing the tops with the back of a spoon.

Step 8

Chill in the refrigerator for at least 2 hours to allow the mousse to set.

Step 9

Just before serving, garnish with grated dark chocolate or chocolate shavings, if desired.
