Ingredients

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.75 cups Granulated sugar
  • 2 tablespoons Espresso powder
  • 1 teaspoon Vanilla extract
  • 4 large Egg yolks
  • 0.5 cup Almonds, roasted and chopped
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan, combine the heavy cream, whole milk, and espresso powder. Heat over medium-low heat, stirring occasionally, until the mixture is warm but not boiling (around 170°F/77°C).

Step 2

In a separate medium bowl, whisk the egg yolks and granulated sugar until the mixture is pale and slightly thickened, about 2-3 minutes.

Step 3

Slowly drizzle about 1/2 cup of the warm cream mixture into the egg yolks while constantly whisking to temper the eggs.

Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Add the salt and continue cooking over low heat, stirring constantly with a wooden spoon or silicone spatula, until the mixture thickens slightly and coats the back of the spoon. This should take about 5-7 minutes (don’t let it boil!).
