In a medium saucepan, combine the heavy cream, whole milk, and espresso powder. Heat over medium-low heat, stirring occasionally, until the mixture is warm but not boiling (around 170°F/77°C).
In a separate medium bowl, whisk the egg yolks and granulated sugar until the mixture is pale and slightly thickened, about 2-3 minutes.
