  • 1 pound dried navy beans
  • 8 cups water
  • 6 slices bacon, diced
  • 1 medium onion, finely chopped
  • 1 cup ketchup
  • 0.33 cup brown sugar, packed
  • 2 tablespoons molasses
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Rinse the dried navy beans under cold water, removing any debris. Place them in a large bowl and cover with water. Soak the beans overnight or for at least 8 hours.

Step 2

Drain and rinse the soaked beans. Place them in a large pot with 8 cups of fresh water. Bring to a boil, then reduce the heat and simmer for 60-90 minutes, or until the beans are tender. Drain and set aside.

Preheat your oven to 300°F (150°C).

In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set aside on a plate lined with paper towels.
