  • 4 pieces (about 6oz each) Skinless cod fillets
  • 1 cup Red lentils
  • 3 cups Chicken or vegetable stock
  • 3 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground turmeric
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Cayenne pepper (optional, for heat)
  • 1 cup Canned diced tomatoes
  • 2 cups Fresh spinach leaves
  • 1 whole Lemon, juiced
  • 2 tablespoons Fresh cilantro, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Rinse the red lentils under cold water until the water runs clear. Set aside.

Step 2

In a large saucepan or deep skillet, heat 2 tablespoons of olive oil over medium heat.

Add the finely chopped onion and sauté for 5–7 minutes until softened and golden.

Stir in the minced garlic, cumin seeds, ground coriander, turmeric, paprika, and cayenne pepper (if using). Cook for 1–2 minutes until fragrant.
