Ingredients

  • 4 pieces (about 150g per fillet) Cod fillets
  • 2 large Yellow onion
  • 2 tablespoons (chopped) Fresh chives
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 100 milliliters White wine (dry)
  • 100 milliliters Fish stock
  • 1 tablespoon Lemon juice
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper

Directions

Step 1

Pat the cod fillets dry with paper towels and season both sides lightly with salt and black pepper.

Step 2

Peel and thinly slice the yellow onions into half-moons. Set aside.

Step 3

Heat 1 tablespoon of olive oil and the butter in a large skillet over medium heat. Add the sliced onions and cook, stirring frequently, for 8-10 minutes or until the onions are soft and caramelized. Remove the onions from the skillet and set aside.

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the cod fillets and sear for 2-3 minutes on each side until golden brown.
