Ingredients

  • 4 pieces (6 oz each) Cod fillets
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups (halved) Cherry tomatoes
  • 0.5 cup (pitted and sliced) Kalamata olives
  • 2 tablespoons (rinsed) Capers
  • 0.25 cup (finely diced) Red onion
  • 3 tablespoons (chopped) Parsley
  • 2 tablespoons (chopped) Fresh basil
  • 2 tablespoons (freshly squeezed) Lemon juice
  • 2 cloves (minced) Garlic

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Pat the cod fillets dry with a paper towel. Brush each fillet with 1 tablespoon of olive oil and sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Place the cod fillets onto the prepared baking sheet and bake in the preheated oven for 12–15 minutes, or until the fish is opaque and flakes easily with a fork.
