  • 2 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Water

Directions

Step 1

Peel and slice the potatoes into 1/4-inch thick rounds. Place them in a pot, cover with 2 cups of water, and add a pinch of salt. Bring to a boil, then simmer for 8-10 minutes until just tender but not falling apart. Drain and set aside.

Step 2

While the potatoes are boiling, pat the cod fillets dry with a paper towel and cut them into bite-sized pieces, about 2 inches in size. Season with salt, black pepper, and a light sprinkle of smoked paprika. Set aside.
