  • 1 lb salted cod (bacalhau)
  • 4 medium potatoes
  • 2 medium onion
  • 4 garlic cloves
  • 0.5 cup olive oil
  • 0.25 cup black olives
  • 2 tbsp fresh parsley
  • 2 cups milk
  • to taste black pepper
  • to taste salt

Directions

Step 1

1. Soak the salted cod in cold water for 24 to 48 hours, changing the water 2–3 times a day to remove the excess salt. Drain and pat dry.

2. Preheat your oven to 375°F (190°C).

3. In a medium pot, boil the potatoes (with skins on) until just tender, about 15 minutes. Cool slightly, peel, and slice into 1/4-inch rounds. Set aside.

4. Thinly slice the onions and garlic cloves. In a large skillet over medium heat, add 1/4 cup of olive oil and sauté the onions and garlic until soft and golden, about 10 minutes.

5. Heat the milk in a saucepan over low heat. Once warm, add the cod and poach it gently for about 10 minutes. Remove the cod from the milk, flake it into pieces, and set aside.

6. In a baking dish, layer half of the potato slices, flaked cod, and sautéed onions. Repeat the layers with the remaining ingredients.
