Ingredients

  • 4 pieces cod fillets
  • 4 tablespoons olive oil
  • 2 large, sliced onion
  • 4 minced garlic cloves
  • 2 medium, thinly sliced carrot
  • 2 thinly sliced celery stalks
  • 400 grams cherry tomatoes
  • 300 grams crushed tomatoes
  • 2 tablespoons, chopped parsley
  • 2 tablespoons, chopped dill
  • 1 cup dry white wine
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece bay leaf

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Heat 3 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the sliced onions and sauté until soft and translucent, about 5 minutes.

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Add the sliced carrots and celery, cooking for 5-7 minutes until softened.

Stir in the cherry tomatoes, crushed tomatoes, white wine, lemon juice, bay leaf, salt, and black pepper.
