Ingredients

  • 4 pieces (6 oz each) Cod fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 minced Garlic cloves
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 1 cup Orzo
  • 3 cups Chicken broth
  • 0.5 cup (chopped) Fresh basil leaves
  • 0.25 cup (grated) Parmesan cheese
  • 1 cup (halved, optional) Cherry tomatoes
  • 0.25 teaspoon (optional) Red pepper flakes

Directions

Step 1

Season the cod fillets on both sides with salt and black pepper. Set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Once melted, add the cod fillets and sear for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
