Ingredients

  • 4 pieces Cod fillets
  • 4 medium-sized Potatoes
  • 3 medium-sized Carrots
  • 1 medium-sized Zucchini
  • 1 medium-sized Onion
  • 3 cloves Garlic cloves
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Milk
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons Parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Peel the potatoes and carrots, then slice them and the zucchini into thin rounds. Dice the onion and finely chop the garlic.

Step 3

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened, about 3 minutes. Remove from heat and set aside.

In a medium saucepan, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes until slightly golden.
