Ingredients

  • 1 can (13.5 oz) Full-fat coconut milk
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

Place the can of full-fat coconut milk in the refrigerator for at least 8 hours, or overnight, to allow the cream to separate from the liquid.

Step 2

Once fully chilled, carefully open the can without shaking it or turning it upside down.

Step 3

Scoop out the thick cream that has solidified at the top of the can and transfer it to a mixing bowl. You should be left with about 3/4 cup of coconut cream. Discard or save the remaining liquid for another use.

Step 4

Using an electric mixer, beat the coconut cream on medium-high speed until it becomes fluffy and soft peaks form, about 3 to 4 minutes.

Step 5

Add the powdered sugar and vanilla extract. Continue to whip the mixture until well combined and still maintaining soft peaks.

Step 6

Taste and adjust sweetness if desired by adding more powdered sugar, 1 tablespoon at a time.

Step 7

Serve immediately to top desserts, fruits, or beverages. Alternatively, transfer the whipped cream to an airtight container and store it in the refrigerator for up to 5 days.
