Ingredients

  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Shredded coconut (sweetened or unsweetened)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats and set aside.

Step 2

In a large mixing bowl, cream the unsalted butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

Step 3

Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the vanilla extract.

Step 4

In a separate bowl, sift together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing to ensure tender cookies.

Step 6

Fold in the shredded coconut until evenly distributed throughout the dough.

Step 7

Using a tablespoon or small cookie scoop, portion the dough into 1.5-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Lightly flatten each dough ball with the tines of a fork, pressing down to create a 'washboard' pattern.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Do not overbake to maintain a soft center.

Step 10

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to one week, or freeze for longer storage. Enjoy!
