  • 0.75 cup Sweetened condensed milk
  • 1.5 teaspoons Vanilla extract
  • 2 Egg whites
  • 0.25 teaspoon Salt
  • 4 ounces Chocolate (optional, for drizzling or dipping)

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the shredded sweetened coconut, sweetened condensed milk, and vanilla extract. Stir until well mixed and set aside.

Step 3

In a separate, clean bowl, beat the egg whites with the salt using an electric mixer on high speed until stiff peaks form.

Step 4

Gently fold the beaten egg whites into the coconut mixture, being careful not to deflate the egg whites.

Step 5

Using a small cookie scoop or a tablespoon, drop mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
