Ingredients

  • 500 grams large prawns (shrimp), peeled and deveined
  • 400 ml coconut milk
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 medium tomato, finely chopped
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon red chili powder (optional, for spice)
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 3 tablespoons fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the vegetable oil in a large skillet or pan over medium heat.

Step 2

Add the finely chopped onion and cook until softened, about 3-4 minutes.

Step 3

Stir in the minced garlic and ginger, and sauté for 1-2 minutes until fragrant.

Step 4

Add the chopped tomato and cook until it softens and melds with the mixture, about 3 minutes.

Step 5

Stir in the curry powder, turmeric powder, ground cumin, paprika, and red chili powder (if using). Cook for 1-2 minutes, stirring frequently, to toast the spices.

Step 6

Pour in the coconut milk and stir well to combine. Bring to a gentle simmer.

Step 7

Add the peeled and deveined prawns (shrimp) to the curry. Simmer for 5-7 minutes, or until the prawns turn pink and are cooked through.

Step 8

Stir in the lime juice and adjust the seasoning with salt and black pepper to taste.

Step 9

Garnish with freshly chopped cilantro and serve hot over steamed rice or with naan bread.
