Ingredients

  • 400 ml Full-fat coconut milk
  • 200 ml Heavy cream
  • 5 Egg yolks
  • 80 g Granulated sugar
  • 1 tsp Vanilla extract
  • 0.25 tsp Salt
  • 2 tbsp Toasted shredded coconut (optional for garnish)

Directions

Step 1

Preheat your oven to 325°F (160°C). Place six small ramekins in a baking dish large enough to hold them all without touching.

In a medium saucepan over medium heat, combine the coconut milk and heavy cream. Heat until just steaming, but do not let it boil. Remove from the heat.

Step 3

In a mixing bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and salt until pale and well combined.

Slowly pour the warmed coconut milk and cream mixture into the egg yolk mixture, whisking constantly to ensure the eggs do not curdle.

Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl with a spout to ensure a smooth custard.

Divide the custard mixture evenly among the ramekins in the baking dish.
