In a large mixing bowl, whisk together the coconut milk and sweetened condensed milk until fully combined.
Add the shredded coconut, vanilla extract, and granulated sugar (if using). Mix well to distribute the ingredients evenly.
Pour the mixture into popsicle molds, leaving a small gap at the top to allow for expansion as they freeze.
Insert popsicle sticks into each mold and gently tap the molds on the counter to release any air bubbles.
