  • 1.75 cups Granulated sugar
  • 4 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Coconut milk
  • 1 cup Crushed pineapple, drained
  • 1 cup Shredded sweetened coconut
  • 8 ounces Cream cheese, softened
  • 0.5 cup Unsalted butter, softened
  • 3 cups Powdered sugar
  • 1 teaspoon Coconut extract
  • 0.5 cup Shredded toasted coconut (optional garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the unsalted butter and granulated sugar together with an electric mixer until light and fluffy, about 3-4 minutes.

Add the eggs to the butter mixture one at a time, beating well after each addition. Then mix in the vanilla extract.
