Ingredients

  • 4 tbsp unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 0.5 cup all-purpose flour
  • 4 large eggs
  • 2 cups milk
  • 2 tsp vanilla extract
  • 0.5 cup unsweetened shredded coconut
  • 0.25 tsp baking powder
  • 0.25 tsp salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish or round baking dish and set it aside.

Step 2

In a large mixing bowl, beat the eggs until well combined using a whisk or electric hand mixer on low speed.

Step 3

Gradually add the sugar, melted butter, and vanilla extract to the eggs. Continue mixing until smooth and fully incorporated.

Step 4

Sift the flour, baking powder, and salt into the mixture. Whisk until there are no lumps and everything is evenly mixed.

Step 5

Slowly pour in the milk and stir. The batter will be thin, but this is normal.

Step 6

Fold in the shredded coconut until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared pie dish. The batter will even itself out in the dish.

Step 8

Bake the pie in the preheated oven for 50–55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 9

Remove the pie from the oven and allow it to cool completely on a wire rack. The pie will firm up as it cools.

Step 10

Slice and serve on its own, or with a dollop of whipped cream for extra indulgence. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
