Ingredients

  • 2 cups Grated coconut (fresh or desiccated)
  • 1 cup Granulated sugar
  • 0.5 cup Whole milk
  • 0.5 teaspoon Cardamom powder
  • 2 teaspoons Ghee (clarified butter)
  • 2 tablespoons Chopped nuts (optional, such as cashews or almonds)

Directions

Step 1

In a heavy-bottomed pan or skillet, add the grated coconut and milk. Stir well to combine.

Step 2

Place the pan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent it from sticking or burning.

Step 3

Add the granulated sugar to the pan and mix thoroughly. Continue to cook, stirring frequently, as the mixture thickens and the sugar fully dissolves.

Step 4

Once the mixture starts to leave the sides of the pan and forms a cohesive mass, reduce the heat slightly and mix in the cardamom powder.

Step 5

Add the ghee, one teaspoon at a time, and continue stirring. The ghee will enhance the texture and flavor of the Nantu.

Step 6

If using chopped nuts, fold them into the mixture at this stage. Stir to evenly distribute them.

Step 7

Turn off the heat and allow the mixture to cool slightly, just until it is safe to handle.

Step 8

While still warm, take small portions of the mixture and shape them into bite-sized rounds, flattening each slightly to form discs, or shaping into small rectangular bars if preferred.

Step 9

Place the shaped Coconut Nantus on a parchment-lined tray or plate and allow them to cool completely at room temperature.

Step 10

Once set, store the Coconut Nantus in an airtight container for up to a week. Serve as a dessert or a sweet snack with your favorite beverage.
