Ingredients

  • 2 cups Coconut milk (full fat)
  • 1 cup Heavy cream
  • 0.5 cup Sugar
  • 1 teaspoon Vanilla extract
  • 1 packet Unflavored gelatin powder
  • 3 tablespoons Water
  • 2 cups Fresh strawberries
  • 1 tablespoon Lime juice
  • 1 teaspoon Lime zest
  • 1 teaspoon Fresh ginger (grated)
  • 2 tablespoons Honey

Directions

Step 1

In a small bowl, sprinkle the gelatin over 3 tablespoons of water and let it bloom for about 5 minutes.

Step 2

In a medium saucepan, combine the coconut milk, heavy cream, and sugar. Heat the mixture over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling.

Step 3

Remove the saucepan from the heat and stir in the bloomed gelatin until completely dissolved. Add the vanilla extract and mix well.

Step 4

Divide the mixture evenly among 6 small ramekins or dessert glasses. Allow the mixture to cool slightly, then cover and refrigerate for at least 4 hours or until set.

Step 5

While the panna cotta is chilling, prepare the ginger lime strawberries. In a mixing bowl, combine the sliced strawberries, lime juice, lime zest, grated ginger, and honey. Toss gently to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

Step 6

When ready to serve, remove the panna cotta from the refrigerator. If desired, unmold the panna cotta by briefly dipping the ramekins in warm water and inverting onto serving plates.

Step 7

Top the panna cotta with a spoonful of the ginger lime strawberries, and garnish with additional lime zest or fresh mint if desired. Serve immediately and enjoy!
